Nishi First Flush Sencha, Organic Japanese Green Tea

Mr. Nishi-san never sells his tea at the auction and is one of the pioneers of organic tea farming in Japan. Rishi Tea has a private contract growing relationship with Mr. Nishi-san and together we established a USDA-NOP Organic Certified tea project in Kagoshima, Japan. Nishi-san’s teas are exquisite due to his masterful expertise in cultivation and aracha processing. Nishi-san’s farm takes great care to nurture Yabukita and other premier tea varietals ensuring that Rishi Organic Sencha is superb year after year. Our First Flush Sencha from Nishi-san is a light-steamed type (asamushi) from the first harvest of spring when the highest quality tea is produced. It’s refreshing and brisk with a pleasant bitter-sweetness, deep umami flavor and a greenish-golden infusion color. Its unique flavor comes from a special blend of unique Japanese tea bush varietals cultivated for us according to strict EU and USDA-NOP organic certified standards.

What I’m Drinking: Jade Fire, Organic Green Tea

Known as Huo Qing (Fire Jade), this green tea is an example of a round-fried tea that is skillfully wok fired and shaped by hand into tightly-rolled, shiny, dark green pellets. As Jade Fire unfurls, the brisk flavor and aromatic notes of fresh pinecone and wild orchid are revealed.

Water: 180˚F / Leaves: 1 teaspoon per 8 ounces / Infusion Time: 2–3 minutes / Ingredients: Organic green tea. / Origin: Guanshan, China.

Emerald Lily has a brisk, fresh flavor that is well balanced with aromatic notes of wildflowers and toasted pine nut. Green tea from Yunnan’s old growth trees contains a higher content of polyphenols and natural tea antioxidants than other green teas.
